E.Mirolio is a modern winery located in the area of the village of Elenovo, at the foot of the Balkan Mountains. It combines Bulgarian wine tradition with Italian precision and sustainable viticulture, specializing in elegant wines with terroir character and expressive style.
Varietal composition: Melnik and Pinot Noir
Terroir: The vineyards are located on hilly terrain with southern exposure and calcareous-clay soils, which provide good drainage and concentration of aromatic compounds. The continental climate with large temperature amplitudes between day and night contributes to slow ripening and the development of fresh acidity.
Vinification: The grapes are hand-picked and undergo selection. After a short maceration, the freely flowing juice is extracted. Fermentation takes place at low temperature in stainless steel vessels, without malolactic fermentation, in order to preserve freshness and varietal character.
Organoleptic characteristics
Aroma: Delicate nose with notes of wild strawberries, peach, white flowers and fresh citrus.
Taste: Light body with pronounced minerality, fresh structure and balanced fruity finish with a slight herbal accent.
Food pairing: Recommended with goat cheese, salmon tartare or grilled zucchini.
Serving temperature: 8°–10°C
Aging potential: Up to 2 years after harvest
