Produced by: Enoteca Terziysko Vineyard – a boutique winery located at the foot of Rila, near the village of Terziysko. The winery works with limited editions and relies on sustainable practices in viticulture and vinification, with a focus on varietal expression and terroir signature.
Varietal composition: Grenache and Cabernet Franc
Terroir: The vineyards are located on hilly terrain with southern exposure, on sandy-stony soils, with good aeration and drainage. The mountain microclimate, with cool nights and sunny days, contributes to balanced ripening of the grapes and the freshness of the wine.
Vinification: The grapes are hand-picked in the early hours of the day and cooled before vinification. This is followed by a gentle press and a short maceration to extract a delicate pink color. Fermentation takes place at low temperatures in stainless steel vessels. The wine is aged briefly on the fine lees for more texture and aromatic density.
Organoleptic characteristics
Aroma: Fresh and tempting nose with aromas of wild strawberries, red apple, pink grapefruit and light florality.
Taste: Light and elegant body, with balanced acidity, discreet structure and a mineral, juicy finish.
Food pairings: Excellent with tapas, prosciutto, salads with strawberries and goat cheese, grilled white meats and spicy dishes from Asian cuisine.
