Produced by: Medi Valley Winery – a modern Bulgarian winery located at the foot of the Rila Mountains, in the village of Smochevo, near the town of Dupnitsa. The winery is known for its attention to terroir and the selection of varieties tailored to the microclimate of the Struma River Valley. Medi Veli combines modern technologies with a manual approach to winemaking.
Terroir:
The vineyards are located in the Struma River Valley – an area with southern exposure, mineral soils and a distinct continental-Mediterranean climate. This terroir contributes to the ripening of the grapes with high phenolic maturity, but at the same time with preserved freshness – ideal conditions for elegant and mineral rosés.
Vinification:
The grapes are hand-picked and passed through a selection table. This is followed by a short maceration at low temperature and gentle pressing. Fermentation takes place in stainless steel vessels at a controlled temperature (~14°C) for 30–45 days. Part of the blend may be aged briefly on fine lees for additional texture and volume.
