Paris Mavromatis is a very old ouzo producer in Patras, a colleague and friend of Panagiotis Vadana and after he died and his distillery was closed by his nephew Thanasis Georgopoulos, the Vadana distillery took over to continue the production of his ouzo with exactly the same recipe.
The traditional ouzo of Paris Mavromatis is based on the quality distillation of several aromatic seeds, roots and herbs with the main presence of anise, fennel and mastic.
Through a slow distillation process in traditional copper kettles, which are built with refractory bricks and chamotte (a refractory material used to line ovens and other products that must withstand high temperatures). The heads and tails of the distillate, i.e. the initial and final part of the distillate, are discarded, leaving only the central part, the "heart", so that the distillate has a better aroma and ideal taste.
This distillate is diluted with the crystal clear water of the Erimanu Mountains and, before being bottled, is stored for a certain period of time for maturation and homogenization, after first being filtered.
The rich taste and special aroma of Ouzo Mavromati meet the wishes of friends for a traditional Ouzo.
It can be drunk neat, but it is recommended to dilute with ice water, perhaps with the addition of ice.
The resulting emulsion after adding water ignites an explosion of aromas - > the aroma of seeds and herbs is released, the composition of the drink is enhanced, the taste is released and the senses take off!
