The Glenallachie Single Casks 2007 PX Puncheon 800467 15 Years Old
When he became the owner of the GlenAllachie Distillery, Billy Walker began an extensive program to evaluate the 50,000 casks on the grounds of the distillery. Since then, the distillery has been bottling in limited series a selection of single casks that show the complex character of single malts. The results of his precise selection have been awarded many times. This is the fifth batch of single casks specially selected for Europe, each showcasing the unique interplay between wood, distillate and flavor. Known for his innovative use of sherry wood, Billy Walker handpicked this Pedro Ximénez puncheon cask from which Billy produces this incredibly sweet and complex single malt with aromas of espresso, dark chocolate tart and sticky raisins, balanced by hints of citrus and ginger .
Color: copper.
Aroma: raisins-sultanas, hazelnuts and honey, with orange peel, candied fruit, caramel biscuits and cranberry.
Taste: fruit cake with raisins, blackberry syrup and espresso, honey, maraschino cherries and ginger.
* What is PX Puncheon?
PX: Short for Pedro Ximénez (from the grapes used), it is an exceptionally sweet style of sherry typically originating from Spain. Usually the grapes are dried in the sun to concentrate the sweetness… making this essentially raisin wine. Puncheon: The barrel used for the sherry and then subsequently this whiskey.
