Dom Pérignon is the legendary premium champagne, dedicated only to vintages with exceptional potential. The winery in the Ottavier monastery, Champagne, adheres to the strict tradition of vintage champagne - a blend of one-year harvests, with a long period of stagnation in the cellar.
Variety: 51% Pinot Noir, 49% Chardonnay
Terroir: The grapes come from the highest quality estates in Champagne - 17 Grand Cru and Premier Cru. The soils are siliceous-limestone, and the climate is temperate, with changes during the season, which create favorable conditions for the accumulation of aroma and structure.
Vinification: Primary fermentation in stainless steel, followed by a classic secondary process with prolonged contact with the lees (minimum 8 years). Dosage: about 4.5g/l.
Organoleptic characteristics
Colour: Deep golden with a complex warm tone and fine perlage.
Aroma: Complex and sensitive – nectarine, peach, citrus, white flowers, hot cocoa, spices (anise, cardamom), delicate minerality and grapefruit bitterness.
Taste: Full and structured body with energy, citrus finish and deep, mineral aftertaste with a sweet-bitter nuance.
Food pairing: Ideal with fine foods – caviar, crab, lobster, lamb, duck and Asian cheese dishes.
Serving temperature: 8°–10°C
Aging potential: Excellent – can develop over the next 20–30 years.
