Doorly’s 3 Year Old is molasses-based, aged for 3 years in old ex-bourbon barrels.
Old barrels are used, which impart less color, to reduce the need for more aggressive filtering, as this can also remove some of the flavor – therefore Doorly’s 3 Year Old is able to retain both the “white” appearance and the body of the rum.
After aging, the spirit is filtered, removing the color of the liquid, but not the flavor profile. This makes it an excellent tool for bartenders, as it will bring out the rich flavors of the aged rum without affecting the color of the drink.
On the nose, it is reminiscent of a weak Falernum - > almonds, cashews, lime peel, crystallized ginger and coconut. White cocoa liqueur, vanilla biscuits and white pepper. Aromas balanced by a sharp, citrusy layer.
It tastes creamy. Coconut milk, biscuits and white pepper. Cashews, almonds, lime leaves and white chocolate, with a velvety and pleasant mouthfeel. Nougat, oaky vanilla and green bananas. There is a faint hint of anise along with a little clove. The finish is medium with coconut and oaky spices.
This is one of the best white rums on the market, especially if you want to make daiquiris – it has a great body and flavour along with a very pleasant, creamy mouthfeel.
