Destileria Serralles has a 150-year history and the technology for producing Don Q is a living process that combines generations of know-how with the transformative power of nature:
1. The sugar cane is crushed and the juice is boiled to extract crystallized sugar. What remains is called molasses and is the basis for the production of rum
2. Molasses is about 50% of the sugar content of the cane juice and for the production of Don Q rum, the best molasses available is carefully selected to ensure a constant fermentation.
3. Fresh water flowing from the Rio Inabón is used to dilute the molasses (preparation for fermentation).
4. The rich aroma of the rum is born from the live starter (yeast) used to carry out the fermentation process. At Don Q, they maintain a unique strain of yeast that they have been using for over 75 years. The yeast naturally transforms the sugars from the molasses into alcohol, producing other compounds in the process. This strain of yeast acts as a unique flavor signature.
Once the yeast has done its job, the resulting liquid is called “beer” –> basically a low-alcohol molasses “mash”. This is the starting point for distillation, which removes unwanted elements while preserving the mash’s distinctive flavor. The alcohol is released from the “beer” and condensed into a spirit. Don Q is distilled five times, removing impurities for a refined aroma, texture and a clean finish. All Don Q rums are aged for at least one year in charred American white oak barrels to give them flavor and character. The interaction between the wood and the rum also gives it its luxurious golden color. Once the rum is matured, the exacting art of blending begins. This is the exclusive domain of the Master Blender, also known as “The Nose”. Light and dark rums are meticulously blended with Soleras (excessively aged rums straight from the barrel) and each batch of the resulting new rum undergoes the expert inspection of the Master Blender before bearing the name Don Q. All Don Q rums are bottled on site at the distillery to ensure the highest quality and consistency.
