Isperih Cherry Brandy is a delicate brandy made from very well-ripened, aromatic and sweet cherries. Unlike the dominant style with a stone aroma and taste in Western Europe, this brandy is distinguished by a fine and delicate aroma of pitted cherries and a slightly floral smell.
Variety : Bing + Van + Cordy + Lambert + Bigarot Byurla
Origin of the fruit: Plovdiv and Isperih region
Technology : 8 kg of cherries are used to produce one bottle of Isperih Cherry Brandy. Achieving perfection in Isperih brandies begins with selecting the best-ripened fruits in the region. Maintaining excellent quality is ensured through long-standing relationships with carefully selected fruit producers, who also follow strict rules in the production of their products. The fermentation of the fruits takes place at controlled temperatures, which guarantees maximum preservation of the fruit aromas. After the fermentation is completed, the distillation process is carried out in Swiss copper vessels under strict and continuous control, which ensures the constant high quality of the resulting pure, intense distillate. Our periodic distillation process ensures the complete removal of all unwanted components and guarantees the complete extraction of all aromas. This is followed by a period of aging and maturation of the distillates in special vessels and rooms at controlled temperatures - > for Cherry Brandy this period is 1 year in stainless steel vessels.
