Bottled Appeninance is a modern micro-winery based in Sofia, with a focus on authentic and experimental winemaking. The project brings together young oenologists and enthusiasts who work with small batches of grapes from different Bulgarian regions, often using wild yeasts and minimal intervention in the process.
Varietal composition: Chardonnay, Pinot Gris
Terroir: The grapes are selected from hilly plots in the southern part of Bulgaria, where the calcareous-stony soils and favorable climatic conditions allow for optimal ripening while maintaining acidity and aromatic freshness.
Vinification: Pinot Naturel or "Pet-Nat" is produced using the ancient method of bottle fermentation without the addition of sugar or yeast. Fermentation begins in stainless steel, after which the wine is bottled before it is completely finished to develop natural bubbles. The wine is not clarified, not stabilized and may contain sediment.
Organoleptic characteristics
Aroma: Juicy and slightly wild nose with notes of green apple, quince, lemon peel and bread crust.
Taste: Fresh and dry, with a fine pearl, a slight spiciness and a salty aftertaste that highlights its natural structure.
Food pairings: An excellent accompaniment to breaded zucchini, anchovy tapas, carrot hummus or goat cheese with sourdough bread.
