Midalidare Brut In the spirit of world wine practices and centuries-old tradition in established wine regions, the project of Midalidare Estate - Midalidare Sparkling Wine - was launched. The beginning was made more than 10 years ago, when, after a careful study of the terroir, new vineyards of the Chardonnay, Pinot Noir and Pinot Meunier varieties were gradually planted. The plots on which they were planted are located in the areas of Prisovete and Dabovets. In harmony with Midalidare's winemaking philosophy, a new cellar is being built, where under the expert guidance of winegrowers Francesco Fogolin and Ivan Kolaxzov and winemakers Marco Zizioli, Nikolay Katerov and Alexander Alexiev, and with the help of the dedicated Midalidare team, the sparkling drink is created. A wine produced entirely according to the traditional method, with fermentation in the bottle, a minimum of 24 months of aging on the lees and made with extreme attention to detail. We are honored to present the first vintage of Midalidare Sparkling wine 2014. Name: Sparkling wine by classic technology Variety: Chardonnay 100% Bottles produced: 1810 bottles. Origin: Thracian lowland, Mogilovo village, Bulgaria. The vines are planted on a northern slope to receive less sunlight and better performance in future production. Total acidity: 8.7 g/l Residual sugar: 6.5 g/l Organoleptic characteristics: Sparkling, golden-yellow color. Dense mousse of fine pearls with a very long play. The nose is dominated by ripe apple with a pleasant citrus bitterness. The aroma flows into the taste with the sensation of green apple and citrus peels. Fresh and firm body with good structure. The finish is long and elegant with an apple-citrus aftertaste.
