New Bloom Winery – a modern winery located in the city of Sliven, in the heart of the Thracian Lowland, one of the most favorable regions for growing red varieties in Bulgaria. The winery is part of the Besa Valley Group and is known for its innovative approach, use of modern technologies and striving to express the character of the Bulgarian terroir.

Terroir:
The vineyards are located in the Thracian Lowland, where the climate is warm and dry, with pronounced temperature amplitudes between day and night. The soils are clay-sandy with limestone inclusions, which ensures a concentration of aromas and a good balance between sugars and acids.

Vinification:
The grapes are hand-picked, undergo strict selection and ferment at a controlled temperature in stainless steel vessels. Part of the wine is aged in oak barrels for additional structure and depth.

Organoleptic characteristics
Aroma:
Intense and complex nose with nuances of blackberry, black cherry, black pepper and violets, complemented by subtle notes of oak and vanilla.
Taste:
Dense, with soft tannins and balanced acidity. The finish is long and spicy, with light chocolate and mineral accents.
Food pairings:
Suitable for red meats, lamb, game, spicy dishes and mature cheeses.
Serving temperature: 16°–18°C
Aging potential: 4–6 years
