Syrah Atara – an elegant red wine from Lavinia Estate, created from the Syrah variety and inspired by the modern style of Bulgarian boutique wineries. The 2021 vintage presents depth, density and expressive character, combining ripe fruit and subtle spiciness.
Terroir:
Transitional continental climate with cool, dry summers and warm winters. The region is characterized by the natural phenomenon of evening breeze – a light wind that appears in the evening and stops before noon, as a result of the different heating of the air between the plains and mountainous areas. Evening breeze is an excellent regulator of alcoholic fermentation and favors the formation of aromatic substances in the grapes. The soils are sandy-clay and clay-limestone.
Vinification:
The cooled grapes pass through a pre-vibration table for manual selection of bunches. The crushed whole grains enter fermenters with a volume of 2 to 8 cubic meters, where cold enzyme maceration is carried out for 8 days, followed by fermentation at a temperature of 24-26 ° C. Aging "sur lie" for 18 months in French oak barrels, clarification, stabilization and bottling.
Organoleptic characteristics
Elegant, concentrated and harmonious wine with a rich fruity character - dominated by blackberry, blueberry and ripe black cherry, complemented by subtle nuances of violets and noble spices. Aging in new French oak - Baron Tonnellerie - adds a sense of noble complexity - dark chocolate, coffee, vanilla and delicately toasted wood. Balanced freshness, velvety, excellently structured tannins. Long, memorable finish with elegant spiciness and a subtle mineral accent.
