Origin: Thracian Lowland, Bulgaria. The plot from which Midalidare Reserva is produced is about 400 decares. and is located east of the new winery, in the Karalietsa area. The vines of the four varieties are planted on alluvial, cinnamon-forest soils, medium and high clay. The yield is controlled and reduced to 200 kg/ha. Vinification: The harvest was carried out at the end of October 2012 in one day, all varieties together. The process begins with cold maceration for about two weeks. Fermentation takes place in new, 400 liter French oak barrels. This is followed by post-fermentative maceration for about a month. The wine matures for 24 months in 7 specially selected new French oak barrels (225 l.) with very fine pores from the Tronce region - France, after which it is bottled without filtration and additional processing and aged in the bottle for 16 months. Aroma: In the aroma of the wine there is a concentration of ripe red fruit, cherry, black forest berries, raw cocoa, sweet pepper, vanilla, raw-smoked meat. Palate: Melted, velvety tannins, perfect acidity and power that has not yet fully revealed itself. It has exceptional length on the palate.Serving suggestions: After decanting at least 30 minutes before consumption, you can enjoy the wine on its own. It combines beautifully with red grilled or dried meats, game, also dishes garnished with truffles.
