Rosisdi is a boutique winery located near the village of Nikolaevo in the Sub-Balkan Valley. It operates entirely with its own vineyards, relying on sustainable practices, limited yields and minimal intervention in vinification, with a focus on the terroir expression and elegance of the wines.
Varietal composition: Cabernet Sauvignon, Merlot, Syrah
Terroir: The vineyards are located at an altitude of about 300 meters above sea level, on sandy-clay soils with good drainage and mineral composition. The climate is temperate continental, with clearly defined seasons and favorable day-night amplitudes, contributing to the accumulation of concentration and balance in the grapes.
Vinification: The three varieties ferment separately at a controlled temperature with prolonged maceration. After fermentation, the wine ages in used French oak barrels for between 8 and 12 months before being blended and bottled.

Aroma: Complex nose with accents of black cherry, plum, dried herbs and cocoa.
Taste: Tight and harmonious body with well-structured tannins, juicy fruit core and a long, spicy finish.
Food pairing: Ideal with roast lamb, beef steak or long-matured cheeses.
