Yamantievi Winery is a family winery located in the Eastern Rhodopes, near the ancient Roman residence Villa Armira, from which the series' name comes. The winery is distinguished by a sustainable approach to viticulture and a desire for authentic expression of the local terroir.
Varietal composition: Merlot
Terroir: The vineyards are located on the southern slopes of the Ivaylovgrad region, on mineral, slightly stony soils with good water regime. The mild winter, long dry summer and warm autumns create excellent conditions for slow ripening of the grapes and accumulation of phenolic maturity.
Vinification: Hand picking and selection of grapes. Fermentation in stainless steel vessels at a controlled temperature. Aging in Bulgarian and French oak barrels for 12 months, with subsequent bottle maturity before release.
Organoleptic characteristics
Aroma: Complex aroma with accents of black plum, dried blueberry, cinnamon and cocoa.
Taste: Soft and rounded taste with ripe tannins, good balance and a long, slightly spicy finish.
Food pairing: Suitable for roast lamb with rosemary, veal with mushrooms or a selection of hard cheeses.
Serving temperature: 16°–18°C
Aging potential: Up to 6 years after harvest
