Villa Yambol is one of the oldest and most modern wineries in Bulgaria, with over 90 years of history and vineyards located in the warm and fertile region of Southern Bulgaria. The winery focuses on a balance between tradition and modern technologies in creating affordable and well-expressed wines.
Grape variety: Merlot
Terroir: The vineyards are located in the Yambol region on alluvial-clay soils with good water permeability. The climate is transitional-continental, with long and hot summers, which contributes to the accumulation of ripe tannins and rich aromas.
Vinification: The grapes are harvested mechanically at optimal ripeness. Fermentation takes place in stainless steel vessels at a controlled temperature with delicate maceration of the skins to extract color and tannins. After fermentation, the wine is aged briefly in stainless steel vessels to preserve its fruity character.
Organoleptic characteristics
Aroma: Pleasant fruity nose with dominant notes of black cherry, blackberry and red pepper.
Taste: Soft and harmonious, with well-rounded tannins, fresh structure and a light, fruity-sweet finish.
Food pairing: Suitable with roasted red meats, lasagna bolognese or vegetable and meat casserole.
Serving temperature: 16°–18°C
Aging potential: Up to 3 years after harvest
