Terroir:
The Shishmanovo Vineyards are located in the South Sakar Hills region – a region with continental-Mediterranean influence, warm days, cool nights and diverse soils, which create excellent conditions for growing Mavrud with pronounced structure and depth.
Vinification:
The grapes are hand-picked at optimal phenolic maturity. Fermentation takes place at a controlled temperature with prolonged maceration to extract color and tannins. The wine was partially aged in oak barrels in order to preserve the varietal character and achieve balance.
Organoleptic characteristics
Aroma:
Intense and full-bodied nose with notes of ripe black fruits, blackberry and cherry, complemented by spicy nuances, dark chocolate and light earthy accents.
Taste:
Medium to full-bodied with well-structured but soft tannins, balanced acidity and a long, spicy finish.
Food pairings:
Suitable for red meats, game, lamb, traditional Bulgarian dishes and mature hard cheeses.
Serving temperature:
16°–18 °C
Aging potential:
Suitable for aging for 3–5 years, during which it will develop additional complexity.
