"We believe that wine should reflect the terroir and the main varietal characteristics. It should not be a commercial product, deliberately polished to appeal to a certain group of consumers," says the Rossidi team.
The grapes - Mavrud branch 1 and branch 2 - are from over 40-year-old vineyards located in the land of the village of Novi Izvor, municipality. Asenovgrad, on chernozem and cinnamon forest soils. The harvest took place on October 16. It is vinified by 25 days of retention with the solid parts: cold maceration, fermentation and post-fermentation maceration. Alcoholic fermentation starts spontaneously and after the formation of 4% alcohol, selected yeasts are added. All processes take place in open type stainless vessels. Aged for 12 months in 350/300/225 liter French oak barrels with a fine structure, 20% of them new oak.
