Midalidare Estate – a modern and prestigious winery located in the village of Mogilovo, in the picturesque Valley of Roses, Bulgaria. The winery is known for its philosophy of creating terroir wines through sustainable viticulture, hand-harvesting and careful selection of grapes. Terroir:
The vineyards are located in the area of the village of Mogilovo, where the continental climate with cool nights and warm days promotes even ripening of the grapes. The soils are clay-stony with limestone inclusions, providing excellent drainage and minerality. These conditions give the wine a deep color, rich structure and elegant aromatic profile.
Vinification:
The grapes are hand-picked, undergo careful selection and cold maceration before fermentation. Fermentation takes place at a controlled temperature in stainless steel vessels, followed by malolactic fermentation in oak barrels. The wine is aged for 10–12 months in a combination of French and American oak, which develops complexity, velvety texture and balanced oak nuances.
Organoleptic characteristics
Aroma:
Intense and complex nose with notes of ripe black plum, blackberry, blueberry and blackcurrant, complemented by cocoa, tobacco, vanilla and a slight smoky accent.
Taste:
Dense, rich and velvety, with a powerful structure, ripe tannins and impressive length. The finish is deep and elegant, with nuances of dark chocolate, spices and ripe fruit.
Food pairings:
An excellent partner for red meats, beef steak, lamb, game and mature cheeses.
