Chianti Classico is the essence of Tuscany - a wine that embodies tradition and authenticity, under the banner of one of the noblest appellations in Tuscany - -> Chianti is produced in eight neighboring but distinct areas that cover a large part of central Tuscany, but only one, the oldest and most original, can produce Chianti Classico. Origin alone, however, is not enough to deserve the name Chianti Classico. The producer must strictly adhere to all DOCG rules, which cover elements of vinification (such as alcohol content, yield per acre and blend), as well as aging and bottling
Grape: Sangiovese + small % Cabernet Sauvignon and Canaiolo Nero
Soil: well-structured limestone
Vinification: Fermentation in the traditional way with skin contact for 8-10 days at a controlled temperature (25-30°C) in stainless steel tanks. Aging is also in stainless steel tanks with a short passage in large French oak barrels. Bottling takes place in the summer after the new harvest.
Organoleptic characteristics
Colour: deep purple red
Aroma: complex and rich bouquet, with notes of plum jam and blackberry, as well as vanilla, licorice and leather, resulting from aging
Taste: balanced and persistent, with a long finish
Food pairing: goes perfectly with Tuscan dishes, such as tortellini with wild boar ragu or picci all'allone (picci pasta with a strongly garlicky tomato sauce)
Serving temperature: between 16-18°C.
