Villa Yambol is one of the oldest wineries in the country, founded in 1924 and located in the heart of the Thracian Lowlands. Combining long-standing tradition with innovative technologies, the winery offers wines with a contemporary style and a characteristic regional touch.
Varietal composition: Cabernet Sauvignon
Terroir: The vineyards are located on alluvial and clay-limestone soils in the area around Yambol. The climate is temperate continental with long and warm summers, conducive to the full ripening of the varieties and the formation of ripe tannins and a rich aromatic profile.
Vinification: The grapes are harvested at optimal ripeness and undergo fermentation at a controlled temperature. After maceration with the skins to extract color and structure, the wine is aged briefly in stainless steel vessels in order to preserve freshness and fruity character.
Organoleptic characteristics
Aroma: Ripe black fruits such as blackberry and blackcurrant, complemented by nuances of black pepper and light green spice.
Taste: Medium-bodied with well-structured but soft tannins, fresh acidity and a subtle fruity-peppery aftertaste.
Food pairing: Goes well with grilled red meats, pasta with tomato sauce or semi-hard cheeses.
Serving temperature: 16°–18°C
