The wine is fermented in stainless steel vessels and aged for 6 months in the bottle before going on the market. Ripe and intense aromas of blackcurrant, mulberry, black cherry and blueberry are complemented by a pleasant spiciness on the finish. Well-balanced body and structured tannins. A Cabernet Sauvignon with the potential to age and develop in bottle that will continue to surprise with time. A suitable combination with slow-cooked meat dishes, mature cheeses, grilled red meats and appetizers.
Villa Velis Wine Cellar is part of the Bulgarian-German wine project Velis Vineyards.
The story begins in 2010, when we started recultivating old vineyards in the Upper Thracian Lowland, which had been left unattended for a long time. In Bulgaria, Velis Vineyards grows traditional French grape varieties - Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Cabernet Franc, Pinot Noir, Syrah, Petit Verdot and Merlot, which are wonderfully influenced by the perfect climate in the Western Thracian Plain. In Germany, we grow Riesling, Chardonnay and Pinot Noir, which enjoy an extremely suitable climate in Rheinhessen. Vinification takes place in our own modern cellars in Flörsheim-Dalsheim, Germany, and in Karabunar, Bulgaria.
The main priority of Velis Vineyards is high quality grapes. To achieve this, maximum yields are limited to 5,000 kg per hectare, and the grapes are harvested entirely by hand. Bulgarian grapes are transported by refrigerated vehicles to our cellar in Rheinhessen, where the grapes are vinified and aged in French oak barrels. Gentle and delicate handling of the grapes is our highest priority. In 2017, our modern cellar was built and equipped.

VILLA VELIS
Villa Velis is our Bulgarian series, vinified by Bulgarian technologists in close proximity to our massifs in Karabunar. Villa Velis is a return to the original, even though it is our newest product. It is a rediscovery of the forgotten and the lost, like the day we discovered our first vineyards in Karabunar and started Velis Vineyards. When nature and man become one. When terroir and winemakers interact.
The Villa Velis series includes white wines from the Sauvignon Blanc and Chardonnay varieties, Rosé from Pinot Noir, as well as red wines, single varietal and blends, from Cabernet Sauvignon, Syrah, Petit Verdot and Merlot. The wines can be consumed as an aperitif, as well as combined with food.
