Bononia Estate Winery – a modern and innovative winery located in the city of Vidin, on the banks of the Danube River.
The winery is part of the eponymous wine complex with a boutique hotel and a tasting center dedicated to the revival of the traditions of northwestern Bulgarian winemaking.
Bononia Estate focuses on authentic local varieties and sustainable viticulture within the PGI Danube Plain.
Terroir:
The vineyards are located in the Vidin region, in the northwestern part of Bulgaria. The soils are alluvial-clay and limestone, with good drainage and mineral composition.
The climate is temperate continental, with warm summers and cool nights, which contributes to preserving the freshness, fruity aromas and fineness of tannins.
Vinification:
The grapes are harvested by hand, with selection of the bunches. Fermentation follows in stainless steel vessels at a controlled temperature to preserve the aroma and varietal character.
The wine is aged briefly in stainless steel vessels and partially in oak barrels to achieve a harmony between freshness and structure.
Organoleptic characteristics
Aroma:
Sophisticated and fresh, with notes of red cherry, berries, raspberry and violets, supported by subtle spicy accents.
Taste:
Light to medium-bodied, juicy and fruity, with a soft tannic structure, lively acidity and an elegant, long finish with nuances of red fruits and minerality.
Food pairings:
Suitable for light meat dishes, pasta with tomato sauce, cheeses with noble mold, grilled chicken and Mediterranean vegetable dishes.

Up to 3–4 years after harvest.
