Varietals: Corvina + Corvinone + Rondinella + Ozeletta
Terroir: The prestigious La Groletta and Conca d’Oro crus, in the hilly Valpolicella Classica appellation area.
The excellent exposure of the La Groletta vineyard, which enjoys the warm rays of the sun and the cool breezes that come from nearby Lake Garda, allows the grapes to give their best. These soils are ideal for activating the typical aromatic profiles of the wine, where the strength of the fruit and darker spices prevail.
The Conca d’Oro vineyards are on soil with a high content of fossils, indicating the presence of active limestone, which is believed to contribute to the quality of the wine. This is why this vineyard is considered very prestigious. The presence of limestone in the soil plays an essential role in enriching the aroma, finesse and elegance of the wines, helping to clearly bring out the floral aromas, improving the taste on the palate, helping the wine to maintain a fresh and crisp fruit sensation. The wines from this vineyard offer wonderful structure and complexity, are long-lasting and can significantly improve with aging.
Vinification: Hand-picked and selected grapes, applying the Appassimento technique for 4 months (Appassimento - an ancient method that has been used since Roman times and is used to dry the grapes in a well-ventilated room, in order to accumulate more sugars). Fermentation in stainless steel for 25 days at 25°-30°C and 3 years of aging in 35 and 65 hectoliter Slavonian oak barrels.
Organoleptic characteristics
Colour: deep ruby red with garnet nuances
Aroma: warm, ripe on the nose, intense and with great sophistication - >spicy, earthy and mocha notes complement a persistent bouquet of juicy black cherries, prunes and dried fruits
Taste: complex and elegant, with many notes of cherry and plum, leather, pine and a whiff of dried mushrooms, marked by a magnificent touch of acidity that keeps it light, but with good length and refreshing spiciness.
Food pairing: ideal with game, red meats or mature cheeses, as well as for long conversations :)
