Produced by Katarzyna Estate – a winery located in the Byalata Prist area, near Svilengrad, at the foot of the Eastern Rhodopes. The winery strives to combine French oenological practices with the potential of the southern Bulgarian terroir, creating wines with their own style and international recognition.
Varietal composition: 100% Viognier
Terroir: The vineyards are located on limestone-clay soils with good drainage. The region is distinguished by a warm, dry climate, favorable for the full ripening of the grapes and the development of a rich aromatic profile.
Vinification: The grapes are hand-picked and carefully selected. After a short maceration and gentle pressing, fermentation takes place at a controlled temperature in stainless steel tanks. The wine is briefly aged on the lees to give texture and complexity.
