Monastery Winery is located near the village of Lesichovo, Pazardzhik region, and stands out with quality white wines from local varieties, including Tamyanka, positioned in the Middle Forest series.
Varietal composition: 100% Tamyanka
Terroir: The vineyards are located on the hills of the Thracian Lowland, on a pale sunny-yellow sandy-clay profile. The climate is moderately continental with a long sunny season and cool days and nights, which helps the accumulation of aromatic and mineral components in the grapes.
Vinification: The grapes are hand-picked at optimal ripeness. After delicate cold pressing and a short stay on the skins, the wine ferments at a controlled temperature in stainless steel vessels. After fermentation, a short aging on the fine lees takes place, which gives structure and softness without losing the varietal freshness
