Cantina San Michele Appiano is one of the most prestigious cooperative wineries in Alto Adige, internationally recognized for the high quality and precise style of its wines. The Sanct Valentin series represents the pinnacle of the winery's production, and the Sauvignon Blanc is an emblematic example of elegance, minerality and depth.
Terroir
The vineyards in the Alto Adige DOC are located at an altitude of between 400 and 600 m. The soils are calcareous-dolomite with clay and gravel elements. The alpine climate with warm days and very cool nights ensures slow ripening, pronounced aromas and excellent acid structure.
Vinification
The grapes are hand-picked at optimal ripeness and undergo careful selection. Fermentation takes place at a controlled temperature, mainly in stainless steel tanks, with part of the wine fermenting and maturing in large oak barrels. Maturation on the fine lees contributes to density, complexity and harmony.
Organoleptic characteristics
Aroma: Intense and complex, with notes of elderberry, nettle, green pepper, grapefruit, exotic fruits and a pronounced minerality.
Taste: Medium to full-bodied, excellent structure and fresh, precise acidity. The taste is multi-layered, with a fruity-mineral character and a long, elegant finish.
Food pairings
Excellent with seafood, fish, asparagus, white meat, goat cheese and fine vegetable dishes.
