Terroir
The vineyards are located on terrains between 100 and 350m above sea level in Collio, on soils with Eocene limestone and Arnesi. The climate is temperate continental with a sea breeze, which helps the freshness and minerality of the wine
Vinification
Hand-harvested in September. The grapes remain in cold maceration overnight before pressing. It is then fermented at a controlled temperature in stainless steel tanks (~2 weeks), with 7 months of aging on the fine lees for additional texture and complexity
Organoleptic characteristics
Color: Pale straw yellow with elegant green hues
Aroma: Clean and mineral nose with fresh notes of yellow pepper, sage, melon, white currant and citrus, as well as a delicate green nuance of tomato leaves and beech oil
Taste: Fresh and elegant, with well-integrated acidity, juicy minerality and a fruity finish. The texture is pleasant, slightly juicy body - persistent and attractive aftertaste
Food pairings
Ideal for seafood, sashimi and sushi, risotto with herbs, white fish sauce, vermicelli with mussels, as well as for light appetizers and aperitifs. Citrus salads, cheeses and green herbs complete the profile
