Produced by Angels Estate – a winery located in the village of Banya, at the foot of Sredna Gora, near the Zhrebchevo Dam. The winery is distinguished by modern technologies and a desire to create wines with a pronounced terroir character.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located on sandy-clay soils with good drainage. The climate is moderately continental with the influence of the nearby dam, which favors slow ripening and the accumulation of aromatic compounds.
Vinification: The grapes are hand-picked and undergo careful selection. After maceration for 4 hours in the press, direct inert pressing of whole grains to 1.2 Bar follows. Fermentation takes place at a temperature of 12–15°C with a pure culture of wine yeast. After the alcoholic fermentation is complete, the wine is aged for 3 months on the fine lees to build body and add more volume to the taste.

Aroma: Citrus fruits, green aromas of peas, boxwood, asparagus, minerality and tropical yellow fruits such as pineapple, pear and passion fruit
Taste: Full, well-balanced delicate taste with good sphere and volume, long sweet juicy finish
Food pairing: Suitable for seafood, fish, salads and light appetizers
