SkyJack is a project inspired by the free spirit and picturesque landscapes of New Zealand, with a focus on the typical Sauvignon Blanc of the Marlborough region. The wines are produced in collaboration with local winemakers and are distinguished by freshness, precision and varietal purity.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located in the Wairau Valley sub-region, on well-drained alluvial soils of gravel and clay. The mild oceanic climate, the large temperature amplitude between day and night, as well as the constant breezes from the Pacific Ocean, contribute to the slow ripening of the grapes and the development of intense aromatics.
Vinification: Hand-picked early in the morning to preserve freshness. After soft pressing, the juice ferments in stainless steel tanks at low temperature. No malolactic fermentation is carried out in order to preserve the natural acidity. Short contact with the lees for better texture.
Organoleptic characteristics
Aroma: Intense and expressive nose with nuances of passion fruit, lime, grapefruit, freshly cut grass and pepper.
Taste: Very fresh and lively, with pronounced acidity, juicy structure and a long citrus aftertaste.
Food pairing: Excellent with mussels with lemon sauce, fish ceviche, avocado and mango salad or goat cheese.
Serving temperature: 8°–10°C
Aging potential: Up to 2–3 years after harvest
