Variety: 100% Sauvignon
Terroir: The Colli Orientali del Friuli area is considered one of the most suitable for growing vines thanks to the specific composition of the soil and the favorable microclimate. The hillsides covered with terraced vineyards are protected from the cold winds blowing from the north by the Julian Prealps and are pleasantly blown by the warm breezes from the Adriatic Sea, just a few dozen kilometers away.
Soil: The soil is made up of alternating layers of flaky marls (clayey limestone, known as "ponca" in Friulian) and sandstone (calcified sands), rich in lime, potassium and phosphorus.
Vine formation: traditional Friuli single-turned and French Guyot
Vinification: The grapes are hand-picked at the right degree of ripeness (usually the first week of September) and carefully pressed into whole bunches. The resulting must is left to settle statically in the cold and a previously prepared (3-4 days) local fermentation yeast is added. It is then left to ferment slowly at a precisely controlled temperature (16°C) for approximately 30 to 40 days. Maturation continues with a long series of batonages, carried out at certain intervals, to obtain a well-rounded and dense wine with a delicate bouquet. Bottling is in early spring after the harvest.
Oroleptic characteristics
Colour: lively, bright straw yellow with distinct greenish accents
Aroma: intense, persistent, typical bouquet for this variety. The aroma is heralded by aromas of great intensity and elegance with typical green sensations of sage and tomato leaves, mixed with fruity, more delicate notes (melon and yellow pepper)
Taste: freshness and aromas are reflected on the palate, enhancing the fresh and dry taste with perfect balance; intense and enveloping, ending with a long aromatic persistence
Food pairing: wine for aperitifs and starters, excellent with lobster, shrimp, salmon and sea fish in general, also excellent with creamy and clear soups, risottos and dishes based on aromatic herbs
