Trost Winery – a family winery located in the Vipava River Valley, Slovenia, near the Italian border. The winery is known for its white wines, produced in the region’s cool climate, which is favorable for growing varieties such as Sauvignon Blanc.

Terroir:
The vineyards are located in the area around the village of Male Žable and the town of Vipava. The soils are mainly clayey on a limestone base, and the climate is moderately continental with the influence of the proximity of the Alps and the Adriatic Sea, which provides optimal conditions for growing Sauvignon Blanc.

Vinification:
The grapes are hand-picked and carefully selected. Fermentation takes place at a controlled temperature in stainless steel vessels, followed by a short aging on fine lees, which gives the wine additional freshness and structure.
Organoleptic characteristics
Colour: Light straw yellow with greenish hues.
Aroma: Fresh and intense nose with notes of citrus fruits, elderberry and passion fruit.
Taste: Light and refreshing, with well-balanced acidity and fruity notes that give the wine smoothness and elegance.
Food pairings:
Excellent with light dishes such as salads, seafood, pasta with slightly creamy sauces, white meats and soft cheeses.
