Produced by Elena Walch, a well-established family winery in Alto Adige, Northern Italy, known for its elegant, aromatic and terroir-driven wines. The winery combines traditional respect for the variety with modern winemaking techniques to recreate the pure character of the region. The Sauvignon Blanc DOC line presents fresh, mineral and complex white wines with a distinct varietal identity.
Varietal composition:
100% Sauvignon Blanc
Terroir:
The vineyards are located in Alto Adige, a mountainous region with a cool climate, strong day-night temperature amplitudes and well-drained clay-sandy soils. These conditions help the grapes to ripen slowly, preserve freshness and develop intense aromas.
Vinification:
The grapes are hand-picked at optimal ripeness. After gentle pressing, fermentation takes place at a controlled temperature in stainless steel tanks to preserve the aromas of the variety. A short aging on fine lees adds density and harmony, without masking the fresh and clean profile.
