Produced by Edoardo Miroglio – an Italian winemaker who created a winery in Elenovo, Sliven region. A modern complex with organic vineyards, some of which are certified, combines traditional art and innovative technologies with a commitment to sustainable production and terroir identity.
Varietal composition: Blend of Chardonnay, Riesling, Sauvignon Blanc
Terroir: Vineyards in the Thracian lowland near Elenovo, at an altitude of 200–300 m. The soils are sandy-clay with good drainage properties, the climate is moderately continental with temperature amplitudes that support the development of aromatic and fresh white wines.
Vinification: The grapes for each part of the blend are harvested by hand. The varieties are vinified separately at a controlled temperature in stainless steel vessels. The blend is made after fermentation. The wine has a rich structure, thanks to careful work with yeast and a short aging on the fine lees.
Organoleptic characteristics
Aroma: Yellow fruits – peach and apple, with delicate tones of citrus and floral nuances.
Taste: Medium body with a fresh feel, creamy texture and a spicy, impactful finish, leaving fruitiness and a soft mineral accent.
Food pairings: Suitable for rich salads, smoked fish, pasta with cream sauce, soft goat cheese.
Serving temperature: 10°–12°C
Aging potential: Up to 3 years after harvest
