Villa Yambol is one of the most established wineries in Bulgaria with a long tradition in winemaking and its own viticulture. The Kabile series draws inspiration from the Thracian sanctuary near Yambol and combines a modern technological approach with respect for the terroir.
Varietal composition: Chardonnay, Sauvignon Blanc
Terroir: The vineyards are located in the Thracian Lowland - an area with clay-limestone soils, good sunshine and a temperate continental climate. This ensures even ripening and a pronounced aromatic profile of the white varieties.
Vinification: The grapes are harvested in the early hours to preserve freshness and aromas. After careful sorting, cold maceration is carried out, followed by fermentation at a controlled temperature in stainless steel vessels. The wine is aged briefly on fine lees for additional density and balance.
Organoleptic characteristics
Aroma: Expressive nose with notes of green apple, citrus and elderberry, complemented by a slight floral nuance.
Taste: Fresh, light and pleasant with a mineral character, good acidity and a clean finish.
Food pairings: Suitable for tuna salad, chicken with lemon and capers or fettuccine with zucchini and basil.
Serving temperature: 8°–10°C
Aging potential: Up to 2 years after harvest
