Brand and origin
Joseph Castan is a winery operating in the south of France, in the Pays d’Oc appellation (Languedoc-Roussillon region). The “Élégance” series reflects a quest for sophistication and balance, with attention to terroir and technology to create high-quality white wines.
Variety
100% Chardonnay – a classic variety that is often used in the Pays d’Oc to combine fruit density and freshness.
Terroir and climate
The wines are produced from different plots in the Pays d’Oc, which include variations in terroir: clay-sandy soils and clay-calcium soils (argilo-calcaire).
Sloping plots (cotea, semi-cotea), with well-drained soils.
The climate is typical of the south of France – warm sunny days, cool nights, which allow the retention of acidity and purity of aroma.
Vinification
Hand selection of grapes (selective harvest) from different plots.
Pressing under inert gases, fermentation at controlled temperature (cold fermentation), use of selected yeasts to highlight aromas.
Partial aging in oak barrels (light maturation under wood) to add volume and complexity without losing freshness.
Organoleptic characteristics
Color: Light yellow with golden reflections, shiny.
Aroma: Combination of white-fleshed fruits - peach, apricot, perhaps green apple; floral notes, vanilla and light nuances of toasted walnut or biscuit.
Taste: Medium to full-bodied; bright fruity radiance; acidity that balances the volume; a feeling of freshness, but with softness and complexity, thanks to the longer maturation. Long finish.

Temperature: ~ 10°–12°C – well chilled, but not icy, to allow the flavors to fully develop.
