• Location: The steep southern slope with a gradient of up to 60% enjoys optimal sunlight, which warms it slightly.
• Soil: Medium-deep, stony, mainly lime-free soils consist of weathered schists, phyllites, quartzites and loess clay.
• Vinification: Hand-picking of only grapes with optimal ripeness. After harvesting, the grapes are quickly transferred to the press. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by several months of aging on fine lees before the wine is finally bottled.

Organoleptic characteristics

The Riesling Kreszenzia Raunenthaler Beiken from the Kloster Eberbah winery dazzles with its elegant, fresh character and brilliant, light yellow color. This wine presents itself with a distinctive herbal-fresh note, reminiscent of a fragrant meadow with fennel. The aromas of anise give it a captivating spiciness, while white pepper gives the wine a tingling sharpness. A hint of green apple brings a pleasant freshness and a light acidity that refreshes the palate.

Food pairing: Grilled pork fillet with peach and chili salsa and bread or quiche with lemon and ricotta.

The ownership of property in the Rauenthaler Berg was first documented in the early 13th century, as can be seen in the property register of the Tiefenthal monastery, which was subordinate to the Eberbach monastery. Documents from 1900 show that Baiken was acquired by the Prussian government for 1.12 million gold marks. The name Baiken comes from the term "bend", as the place is in a bend.
