Produced by Dragomir Wine Estate – a boutique winery founded in 2006. The winery is located in the village of Brestnik, near Plovdiv, and is distinguished by its focus on limited series of wines with a distinct individuality and terroir character.
Varietal composition: 100% Dimyat
Terroir: The vineyards are located in the Rhodope Neck, part of the Western Thracian Lowland, on sandy-clay soils with good drainage. The climate is moderately continental with warm days and cool nights, which favors slow ripening and the accumulation of aromatic compounds.
Vinification: The grapes are hand-picked and undergo careful selection. After cooling to 10–12°C, fermentation takes place at low temperature in stainless steel vessels to preserve the delicate aromas of the variety. The wine is treated with zeolite for purification and stabilization.
