Better Half Garage Wines / Dalakov – a boutique winery founded by the Dalakov family in the village of Zmeevo, Stara Zagora. The winery is known for its natural wines, made in a garage style – in small batches, with manual intervention and a philosophy of minimal technological processing.

Climate: Temperate-continental, with warm summers and windy spring-autumn periods – ideal for aromatic white varieties

Hand-harvested and selected
Fermentation and maceration in Georgian qvevri (clay vessels), buried in the ground – an ancient method, giving structure, body and texture
No filtration or stabilization – natural haze is possible
Aging on the skins for several months
Organoleptic characteristics:
Aroma: Intense and typical of the variety – white flowers, pink pepper, musk, dried herbs
Taste: Dry, with a rich texture, weak tannin structure (from the skins), floral-spicy profile and a mineral finish
