Cantina La Selva is an organic family winery located in the heart of Maremma, the coastal area of southwestern Tuscany. Since 1991, the winery has practiced entirely organic farming, combining traditional methods and modern oenology to create wines with a distinct terroir character.
Grape variety: 100% Vermentino
Terroir: The vineyards are located on hilly terrain with a southerly exposure, on sandy-clay soils rich in minerals. The climate in Maremma is Mediterranean - with long, warm summers, cool nights and a constant sea breeze that preserves the acidity and freshness of the grapes.
Vinification: The grapes are hand-picked and chilled before a careful pressing. After a short cold maceration, fermentation takes place at a controlled temperature in stainless steel tanks. The wine is briefly stored on the fine lees for additional texture and complexity, without the use of oak.
Organoleptic characteristics
Aroma: Bright nose with notes of citrus, peach, green apple and a slight salty aftertaste.
Taste: Fresh and lively, with good structure, fruity juiciness and a distinct mineral finish.
Food pairing: Suitable for seafood risotto, grilled octopus, fish tartare or salads with citrus vinaigrette.
Serving temperature: 8°–10°C
Aging potential: Up to 3 years after harvest
